From Chrismont Estate in the King Valley, this wine’s natural yeast defied microbiological doctrine and fermented at 2°C, which helped lock in a crisp fruit profile, fleshed out with some flinty reduction from batonnage (stirring the bastard), which we did no more than just enough of.
